• 2C AP flour
  • 1t baking soda
  • Pinch of salt
  • 1/3 C brown sugar
  • ½ C margarine (oil based)
  • 1 lemon zest
  • 1 T lemon juice
  • 1 C unbleached all-purpose flour
  • 1 C whole wheat flour
  • ½ teaspoon baking powder
  • ½ C margarine
  • 2 T brown sugar
  • 3 T aquafaba
  • 1 lemon zest
  • 1 T lemon juice

Preheat the oven to 375 F.
In a bowl, combine the flours and baking powder. Set aside.
In a mixer, cream the brown sugar and the margarine. Add the aquafaba, lemon zest and juice, then mix until well combined. Add the dry ingredient and mix until just moistened.
Divide on a baking sheet and cook for about 15 minutes or until the edges are golden brown.
