Happy Valentine’s Day everyone! For this special day we wanted to share with you our cherry bar recipe. Your little sous-chef will love to help in this one! If you don’t feel comfortable to make the compote portion of the recipe, don’t worry! You can always use cherry jam instead.

Cherry Bar

For the compote:

  • 4 Cups cherry (frozen or fresh)
  • 2 Table spoon sugar
  • 1 Table spoon water
  • 2 Table spoon cornstarch

 

For the bar:

  • 2 ½ Cup Oats
  • 1 ¼ Cup Whole wheat flour
  • 1 ¼ Cup Oat bran
  • ½ Cup maple syrup
  • ½ Cup butter (or margarine), melted
  • 1 Cup chocolate chip

 

For the compote:

In a saucepan, mix the cherry, sugar and water. Bring to boil and simmer for 5 minutes or until the sugar is completely dissolved. (Note: if you’re using frozen cherry this step will take a little longer. Bring to boil and simmer for 20 minutes or until the cherry are thawed.) Thicken with the cornstarch. Transfer into a bowl and let cool at room temperature.

For the bar:

Preheat the oven at 375F

Meanwhile, in a bowl, mix the oat, flour and oat bran. Add the maple syrup and the melted butter and mix well. Add the chocolate chip and mix again.

In an 8 inch, square baking dish, lined with parchment paper, put half of the oat mixture. Compress the mixture to cover all the bottom of the dish. Spread the cherry compote and top with another layer of the oat mixture.

Cook for 30 minutes or until the side are slightly brown.

Cool down before cutting.
