This month in the kitchen we’re visiting the world of curries. This variety of dishes originate from the Indian subcontinent and are usually prepared in a sauce which includes a combination of spices or herb. They are so versatile! Vijay, cook at Pump-Kin Patch, shares with us their secret for a good fish curry.

Fish Curry

Ingredients:

  • 6 cloves of garlic
  • 1 Tablespoon mustard seed
  • 1 Tablespoon Fenugreek seed
  • 5 to 6 Dry red chili
  • Curry leaves
  • 2 Tablespoon Turmeric powder
  • 3 Tablespoon Chili powder
  • 3 Tablespoon Coriander powder
  • 2 onions, sliced
  • 6 tomatoes, sliced
  • ½ C tamarin pulp
  • 1 C Coconut milk
  • 1 Kg Salmon
